Fermenting for 8%

I’m making mushroom vinegars and so far I’m adding everclear to get my 8% concentration (or properly just short of), I’m wondering as to how much sugar I would need to add to a relatively sugar free “broth” to ferment it to a finished 8% or just shy of. I just don’t want any unused sugar in my final ferment before making vinegar. Thank you in advance.
