Apple, plums and other fruit vinegar

Us the best prune brandy is made if all plum (not only the juice) ferment 4-5 months. With apple is the same situation in the vinegar production or only to the brandy production ?

no also in vinegar production use all the fruit. the slower the fermentation (means low temperature), the better the alcoholic mash.and therfore the vinegar
