What's the typical length of time for yeast to kick off

If not started after 24 hours, you can awake the yeast by mixing the mash approx three times a day (food blender or drilling machine attachment). Stirring ist not sufficient, since air is needed to feed the yeast, in no-air conditions, the yeast is producing alcohol. After one or two days you should recognized the fermentation has started (pungent smell because of carbonic acid).


Take care, temperature at start should be at least 68 °F (20 °C), thereafter place fermentation container in a cooler environment (about 61 to 66 °F, 16 to 19 °C), to slow down fermentation speed, otherwise smell and taste will be blown out.
